A top-mounted forced-air blower circulates heat uniformly, while an adjustable thermostat maintains 90°F to 190°F for precise results.
Load 24–32 covered 10-1/2″ plates or up to 16 1/1 GN pans on eight rail sets spaced at 3 inches to fit varying menus and timelines. Use the removable humidity reservoir to protect texture and presentation during extended holds.
Built for daily movement, this fully welded stainless steel cabinet rolls on 5-inch casters with brakes and guards product with a full-perimeter bumper. A gasket-sealed door with magnetic latch preserves heat, and push-bar handles on both ends simplify transport. Removable rod-type shelves speed cleaning and reconfiguration between events.
