Power high-volume production with the UNOX XAVL-2021-DPRS ChefTop MIND.Maps Plus combi oven. This electric floor model accepts either (20) full-size 18″ x 26″ sheet pans or (40) full hotel size pans, enabling batch roasting, steaming, and retherm from a single footprint. The roll-in trolley streamlines rack loading across prep, cook, and holding zones.

Program, repeat, and monitor results with MIND.Maps technology and a programmable menu. 3-5/16″ shelf spacing promotes airflow and consistent doneness, while the glass door and right-to-left opening support visibility and smarter traffic flow. Use the included XEVTL-2021 trolley for hotel pans, and adapter grids GRP521 to convert for 18″ x 26″ sheets.

Marine grade stainless steel inside and out withstands demanding, high-moisture environments. The oven runs on 208–240v/60/3-ph and delivers 53.7–71 kW for peak service. NSF and cMETus compliance, plus the included water line for a 3/4″ MPT connection within three feet of placement, simplifies specification and installation.
